Review: First things first: Chicago-based Ambassador Organics does some nice teas, but they need to work on their label copy. Their Biodynamic White Tea is described thusly: “The light and sweet taste of this exceptional tea from the white peony has a a smooth and soft finish with an orchidlike fragrance.”
Um, no. This tea is not made from white peony.
This is a white tea, made from the tea plant (camellia sinensis). This particular style of white tea is called white peony (bai mu dan), and is made from both the tea buds and new leaves. There is no connection between the white peony flower and white tea.
Now that we’ve got that settled, I can say that this is a very good white tea. Unlike the traditional silver needle white tea (made only from the buds of the tea plant) which is extremely light, delicate, and subtle, Ambassador Organics Biodynamic White Tea has plenty of character. It infuses to rich golden cup with a floral, sweet and slightly spice nose and medium body.
The floral note continues on the palate, but there is also a fruity and spicy backnote (reminds me of stewed peaches with a touch of curry powder). The body of this tea carries the strong flavors well, and the somewhat astringent finish gives this tea some structure. Do not oversteep this tea: Ambassador Organics recommends a two minute infusion, I’m inclined to suggest 90 seconds for a more gentle cup.
(Incidentally, this is a nice “first-thing-in-the-morning-tea” for those who don’t need to be jolted into consciousness. It doesn’t jar you, but it doesn’t lull you back to sleep, either.)
