Brand: Narien

Type: White tea

Form: Loose leaf

Cost: $9.00 for Two Ounces (quantity discounts available)

Review: The dry leaf of Narien Drum Mountain White Cloud is a lovely mix of green and silver, with a spicy sweet nose that recalls both basil and mint.  Be warned, however: If this tea is prepared according to package instructions, the result is an almost clear liquor with none of the sweetness  of the nose and not a lot of flavor.

When prepared  in a gaiwan, however, the tea blooms into a sweet, sophisticated, pale green, mildly astringent brew with the flavor of snap peas, and a light, but satisfying, mouthfeel. A very tasty white tea indeed.

Recommendation: This tea requires a bit of work to get the best flavor, so  not recommended for newbies. It loses a lot of its character if prepared according to package directions (in a teapot).

Gaiwan preparation is your best bet: Use a fair amount of leaf, and infuse at about 165 degrees for 1 minute. Leave the gaiwan uncovered during infusion for best results. This is another delicate tea that needs to be consumed on its own, not with food.
