Review: The Tea Spot’s Vintage Oolong is a most curious tea. The dry leaf is a medium-green color and tightly rolled into small pellets. Its nose is redolent with the scent of lilac, apricot, and a hint of almond and it infuses to a pale green/yellow. 
It is medium-bodied, and the fruit, nut, at floral notes are still there, but they are dry and not sweet. There is a fair amount of astringency in the palate, leaving an austere, though not unpleasant impression.
I guess that is why I call it “curious”.
In fact, if this tea were to take human form, it would be that of a strict, but benevolent old aunt: Her hairstyle, home decor, perfume, and clothing may be old-fashioned, but she and her home are so well-put-together that it doesn’t matter.
This is a Victorian lace-curtain tea. “Vintage” is a good way of describing it.
Recommendation: This oolong is austere, so not to the taste of those who insist on lush or intense flavors. However, its floral and dry apricot notes, moderate astringency, and balance make for a very refreshing and refined green oolong.
Food Parings: If I were to pair this tea with food, it would be with fish: Cod, sole, or even catfish, ideally prepared in an Asian style. (The tea brought to mind a dish of lemongrass steamed sole that I once enjoyed.)
Preparation Tips: The floral notes in this tea will get bitter if allowed to steep too long. Short infusions are best.

I hear what you are saying about the first steeping of this tea. When re-steeped the second and third time the result is slightly sweet and not as astringent. I love pairing this tea with sushi.
