Blogging pal Commestiblogger recently alerted me to an LA Times story: “Tea and cancer? Depends how hot”, which reported research that links hot-tea drinking with esophageal cancer.
I feel it necessary to share this story with my readers for two reasons:
1. I want to make it clear that, despite media headlines, the research did not support the notion of tea being the cause of cancer. Instead, researchers said that “. . .the temperature of the liquid was almost certainly to blame rather than the compounds in the tea itself.”.
2. While I admit to enjoying a very hot cuppa from time-to-time, many teas taste best when consumed at a cooler temperatures anyway.
Keep in mind that there is a difference between steeping temperature and drinking temperature: Use a tea thermometer to acertain both your steeping and drinking temperatures to ensure both safety and best flavor.

My husband had shown me that article. Fortunately, I never drink my tea piping hot – mostly because it takes me a while to get to it
but also, I just like it very warm. Burning my mouth has never been much fun.
